This is one of the easiest and tastiest meals I have ever made. Pork chops are cheap, lean and, when cooked correctly, can be very tender and juicy. I hope you enjoy your first recipe!
The Chops
- 2 Tbs firmly packed brown sugar
- 1 Tbs plus 1 tsp salt
- 1 Tbs chopped fresh rosemary (this can be pretty strong so you don’t have to use the entire tbs. You can also use the dried rosemary in a jar)
- 4 thin cut pork chops (about ½ inch thick; at room temperature)
- 1 Tbs bacon grease
- 1 crown fresh (not frozen) broccoli (about 2 cups)
- 2-3 Tbs Extra Virgin Olive Oil
- Salt/Pepper to taste
- 2 Cloves crushed garlic
Mashed Potatoes
- 2lbs Yukon Gold potatoes (about 4-5 medium; cut into 2in pieces. Leave the skin on, this is the most nutritious part)
- ¾ cup heavy cream
- 2Tbs unsalted butter
- ¼ cup milk, plus more as needed
- 1 cup (2oz.) grated white cheddar cheese
- 2 tsp grated onion (you can substitute chopped green onion if you like that better)
Combine the brown sugar, salt and rosemary in a small bowl. Coat the pork chops with the mixture and gently massage the meat. Let it sit for 15 minutes (the key to cooking meat evenly is having it at room temp when you start). Lightly rinse the pork chops and pat dry.
While your chops are curing have your broccoli ready to cut. You can cut off about half of the stem then cut the crown into sections (where it naturally splits is sometimes easiest). Place it on a cookie sheet and drizzle with 2-3 Tbs Olive Oil, sprinkle with salt and pepper and the crushed garlic. With your hands mix it all around so everything is evenly coated. Put in the hot oven for 10 minutes then turn them over so they won’t burn. Cook for 8-10 more minutes.
Put potatoes in a large saucepan and cover with cold salted water. Bring to a boil over high heat then reduce it to a simmer. Cook about 20 min until tender. Drain. Meanwhile, heat the cream, butter, and ¼ cup milk in a small saucepan or in the microwave. Mash the potatoes with a masher or hand mixer. Fold in the warm cream mixture, then the cheese and onion. Season with salt and pepper. Add more milk if needed.
Melt the bacon grease in a large skillet over medium high heat. Add your pork chops and cook until crisp and brown—about 2minutes each side. Be careful not to BURN THEM!
Serve it Hot!
If you’re thirsty: Try a light white wine. Coming in at $8 a bottle Cycle Gladiator makes a Pinot Grigio (Central Coast 2007) that is quite tasty. And it has a cool logo.
